Mix the batter thoroughly. Add a pinch of salt or finely chopped onions, green chilies, and curry leaves for extra flavor if desired.  

  Spread the Batter

  Heat a flat pan and pour a ladleful of batter. Spread it evenly into a thick, round pancake, as adai is meant to be slightly thicker than dosa.

Cook to Perfection   

Drizzle a little oil around the edges and cook on medium heat until golden brown. Flip and cook the other side for a crispy, evenly cooked adai.
